White Cheese and Rigatoni

A fun spin on Mac and cheese. My family is split on which is better, my traditional cheddar or this one, Personally, I like this one!

* I think the secret is the crispy shallots.

Ingredients

  • 6 oz rigatoni
  • 1 chopped shallot
  • 2 minced cloves garlic
  • 1/2 stick butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/3 mascarpone cheese
  • 8 oz gratedĀ  mm
  • 8 oz grated sharp white cheddar
  • 8 oz grated fontina
  • 1/4 tspĀ  n
  • Salt to taste
  • 1/3 cup Panko bread crumbs

Instructions

  • Preheat oven 375
  • Cook rigatoni about 3 minutes less than box calls for
  • Melt butter in large skillet and add shallots-cook for 5 minutes or until a little crispy. Add garlic cook for 30 seconds
  • Add flour and make roux. (2-3 minutes)
  • Add milk and stir till creamy
  • Add mascarpone and remaining cheeses, (leave out 2 cups) salt, pepper and nutmeg
  • Add pasta and pour in baking dish
  • Top remaining cheese and bread crumbs
  • Bake 35 minutes or until top is golden brown
