White Chicken Enchiladas
White Chicken Enchiladas are always a hit at our house for Sunday Family Suppers!

Ingredients
- 10 Flour Tortillas
- 1 Rotisserie Chicken shredded
- 1 Onion chopped and sautéed
- 2 small cans of diced green chilis
- 8 oz Cream Cheese
- 16 oz Monterey Jack Cheese – shredded
- 4 cups heavy cream
Instructions
- Preheat oven to 400
- Saute 1 medium onion until light brown and soft
- Add green chilis and cook for 3-5 minutes on medium
- Add, shredded chicken and cream cheese , salt and pepper to taste
- Cook until cream cheese is melted
- Fill each tortilla with about 1/2 – 3/4 cup chicken mixture, fold and place folded side down in baking dish
- Add shred jack cheese on top
- Pour heavy cream over top
- Bake for 45 – 55 minutes uncovered
- Let sit for 10 minutes before serving
*** If cream is not thickened it needs to cook longer
