White Chicken Enchiladas

White Chicken Enchiladas are always a hit at our house for Sunday Family Suppers!

Ingredients

  • 10 Flour Tortillas
  • 1 Rotisserie Chicken shredded
  • 1 Onion chopped and sautéed
  • 2 small cans of diced green chilis
  • 8 oz Cream Cheese
  • 16 oz Monterey Jack Cheese – shredded
  • 4 cups heavy cream

Instructions

  • Preheat oven to 400
  • Saute 1 medium onion until light brown and soft
  • Add green chilis and cook for 3-5 minutes on medium
  • Add, shredded chicken and cream cheese , salt and pepper to taste
  • Cook until cream cheese is melted
  • Fill each tortilla with about 1/2 – 3/4 cup chicken mixture, fold and place folded side down in baking dish
  • Add shred jack cheese on top
  • Pour heavy cream over top
  • Bake for 45 – 55 minutes uncovered
  • Let sit for 10 minutes before serving

*** If cream is not thickened it needs to cook longer
