Chicken Thighs with Onion Gravy

Ingredients

  • 6-8 Boneless, skinless chicken thighs
  • 1 cup flour
  • 1 Tbls poultry seasoning (2 tsp set aside)
  • 1 Tbls garlic powder (t tsp set aside)
  • Salt and pepper to taste
  • 1 tsp paprika
  • ½ Stick salted butter
  • I large sweet onion, thinly sliced
  • 2 cups chicken stock
  • 2 cups heavy cream

Instructions

  1. Mix flour and seasonings in bowl or plastic bag and add chicken to coat.
  2. Melt butter in large skillet and then brown chicken on both sides.
  3. Add sliced onion, stock, cream and 1 tsp of poultry seasoning and garlic, salt and pepper to taste. Bring to a boil, then lower heat and simmer for 1 hour.
  4. Add remaining seasoning to taste.
  5. Serve over mashed potatoes or rice.
