Potato Soup with Garlic Croutons

Serve in bowl and garnish with bacon, cheese, sour cream and croutons.

Ingredients

  • 3lbs potato’s cut into small cubes
  • 1 small chopped onion
  • 1lb bacon
  • 4 cups chicken stock
  • 4 cups half and half
  • 8oz cream cheese
  • 16oz cheddar cheese
  • 5 chopped scallions
  • French loaf
  • Olive oil
  • Crushed garlic and/or seasoning of choice

How to make it

  1. Cook bacon in soup pot. Discard 80% of grease, chop bacon and set aside
  2. Saute’ chopped onion in bacon drippings until soft.
  3. Add chicken broth and chopped potato’s and boil for approximately 20 minutes or until potato’s are soft.
  4. Add half and half, cream cheese, cheddar cheese and half the bacon and cook on low for 30 minutes.

Garlic Croutons

  1. Place cubed bread on large baking pan and drizzle with olive oil, garlic and seasoning.
  2. Bake on 350 for 20 minutes. Tossing half way through.
