Red Rice

Red rice is one of Michael’s all-time favorite side dishes. His Mom and Sister make the best, but he says mine is a close second. LOL

Ingredients

  • 2 cups rice
  • 4 cups finely chopped tomatos’ with juice ( I LOVE the boxed Pomi brand)
  • 1 cup water
  • 1 onion – chopped
  • 1/2 lb bacon – cut into small pieces
  • 1 tsp sugar
  • salt and pepper to taste

Instructions

  • Cook bacon and onion together until bacon is almost crisp and onion is translucent – don not drain drippings
  • Add tomatoes and water and bring to a boil
  • Add rice, lower to heat to a simmer, salt, pepper, and sugar, cover and cook for approximately 20 minutes or until rice is soft. Stirring occasionally.
