White Cheese and Rigatoni
A fun spin on Mac and cheese. My family is split on which is better, my traditional cheddar or this one, Personally, I like this one!
* I think the secret is the crispy shallots.

Ingredients
- 6 oz rigatoni
- 1 chopped shallot
- 2 minced cloves garlic
- 1/2 stick butter
- 1/4 cup flour
- 2 cups milk
- 1/3 mascarpone cheese
- 8 oz gratedĀ mm
- 8 oz grated sharp white cheddar
- 8 oz grated fontina
- 1/4 tspĀ n
- Salt to taste
- 1/3 cup Panko bread crumbs
Instructions
- Preheat oven 375
- Cook rigatoni about 3 minutes less than box calls for
- Melt butter in large skillet and add shallots-cook for 5 minutes or until a little crispy. Add garlic cook for 30 seconds
- Add flour and make roux. (2-3 minutes)
- Add milk and stir till creamy
- Add mascarpone and remaining cheeses, (leave out 2 cups) salt, pepper and nutmeg
- Add pasta and pour in baking dish
- Top remaining cheese and bread crumbs
- Bake 35 minutes or until top is golden brown
